The long-awaited next issue of FANTASTIC MAN is currently being finished at the Amsterdam HQ powered by the nourishing goodness of quinoa, a light and wholesome seed that acts like a grain and has a very high protein content. It forms the basis of a delicious lunchtime salad. A pot of quinoa tends to go on the office stove at around 12:30pm, for staff to do with it as they see fit. In a favourite preparation discovered through various lunchtime trials, quinoa forms a solid base for a salad comprised of smoked mackerel, chopped spring onions, tomatoes and greens. Finish this with a squeeze of lemon and a good shake of olive oil. However, this fad for quinoa is no doubt soon to pall, so any other grain recommendations would be gratefully received.

Favorite of mine, not a seed though, is hot lentils with Gorgonzola, rocket & cherry tomatoes with some olive oil & balsamic vinegar. Easy & tasty

Wait until you start using it like the South Americans do. I am really loving it in Chupe (stew) so far I am yet to get beyod the Peruvian (shrimp) and Ecudorian (chicken) versions of it. Quinoa is nt a fad!

I particularly like red quinoa with kale. Soho House in LA has a particularly good quinoa salad.

I really love Tabbouleh, a salad made of bulgur, mint, tomatoes, spring onions, and using lemon juice and olive oil for the dressing.
