The Dutch and the Belgians have their very own version of the Indonesian Spring roll, called the ‘loempia’, advises FANTASTIC MAN’s globetrotting chef Mr. MAGNUS ÅKESSON. The loempia is not to be confused with any of the many versions of the real Indonesian ‘lumpia’, which would NEVER contain sliced ham since almost 90 per cent of the Indonesian populace is Muslim. On the larger end of the spring roll spectrum, the loempia is often filled with bean sprouts, chopped omelette and sliced ham. Here is a Dutch snack bar version, the LOEMPIA SPECIAAL, with its rather eccentric addition of a slice of ham and an egg, sunny side up. Special indeed!
