A particularly culinary fun thing to do at the end of this month in Copenhagen, Denmark, is attend THE SOCIAL ACT, an irregular and extravagantly modern way of group dining. Bookings are open for 22-25 August, 2012. It’s hard to predict what chefs BO LINDEGAARD and LASSE ASKOV, a.k.a. I’M A KOMBO, will serve this time, but it will very likely be super tasty and sumptuous (9 courses, more or less) while diners will be asked to somehow get involved in the preparing and/or uncovering of the fabulous foods – or not. It’ll definitely be memorable, we know from experience. An example of what Mr. LINDEGAARD and Mr. ASKOV served at a previous SOCIAL ACT can be seen above: chilled passion fruit infused with a fresh mint jelly – an amazing desert that amateur chefs might fancy recreating at home. Take 100ml of lukewarm peppermint tea infusion; melt 30g sugar and a pinch of salt in the tea. Add 12g of fresh mint leaves and mix it in a blender. Strain the liquid through a fine cloth and add 2g of gelatine that’s been soaked in water. Also add some green food colouring. Take a dozen pieces of passion fruit and inject 5mg of the jelly into each fruit. Chill, and serve with a knife and teaspoon. Yum!
